			<content:encoded><![CDATA[<p>Perhaps the most interesting cheese to be created since cheddar, Rush Creek is a soft cheese made by Uplands in Wisconsin, and if you are luck enough to be able to find a wheel, buy it. Buy it and hoard it, but eat it quickly &#8211; it is already aged 60 days (very long for a soft cheese) and should be consumed in a few days. That probably won&#8217;t be a problem.</p>
<p>I was lucky enough to travel to the Uplands dairy to meet with Andy Hatch, the creator of Rush Creek.</p>
